Chicken Fricassee

After our Farewell to Shelley/Christmas party in December, several people asked me to post the recipe for the Chicken Fricassee we served. Chicken Fricassee is a traditional French chicken stew made with browned chicken pieces braised in a creamy white mushroom sauce. This is a rustic family-style meal that is easy to prepare and serve.

Ingredients (for 8 people)

• 8 chicken thighs
• 1 lb. white mushrooms, sliced
• 1 yellow onion, chopped
• 8 oz. of cream
• 8 oz. of chicken or turkey gravy
• 2 oz. white wine
• 1 lb. of noodles (your choice)
• 1 stick of butter

Directions

1) Sauté chicken thighs in butter until almost golden.

2) Add the chopped onions and continue to sauté until the chicken and onions are golden.

3) Add the white wine, sliced mushrooms and simmer for 2 minutes.

4) Add the cream and gravy. Simmer for 5 more minutes.

5) Cook the pasta, drain and mix with remaining butter.

6) Serve the Fricassee over the pasta.

To your taste, add cooked asparagus.
